Onion Rings | Fair-Style with A Crispy Batter

Onion Rings | Fair-Style with A Crispy Batter
Ingredients:
2 sweet onions
About 2 tablespoons cornstarch (enough to lightly coat onion slices)
1 cup all-purpose gluten-free flour (we used a store brand GF all-purpose flour mix)
½ teaspoon salt
1 teaspoon baking powder
½ teaspoon garlic powder
½ teaspoon paprika
1 - 1¼ cups of your favorite carbonated liquid (gluten free beer, club soda, flavored soda, etc. Note: volume needed may vary with gluten free flour used)
½ -1 tsp lemon juice (optional)
Deep skillet or Dutch oven with 3 inches of neutral oil (like canola)
Salt for sprinkling on finished onion rings
For a crispy texture, we recommend a flour blend that contains more rice and cornstarch over flour blends with a higher protein content from beans. We used an all-purpose flour blend with white rice flour as its main ingredient
Directions:
1. Place oil in skillet on stove top and start heating to about 365 F (about medium for our stove), monitor frequently
2. Remove outer layer of onions and cut horizontally into approximately 1 inch slices: separate into rings
Cut onions into approximately 1 inch slices, then separate the rings
3. Coat onion rings with a thin layer of cornstarch
Tossing onions in a light coating of corn starch helps batter stick to the onions
4. Mix together dry ingredients:
Gluten free flour
Salt
Baking powder
Garlic powder
Paprika
It only takes a few ingredients to create the delicious taste and texture found in these onion rings!
5. Add in carbonated beverage until batter reaches desired thickness; add lemon juice (optional, and not necessary if your beverage contains lemon)
Gluten free flour blends vary in their ability to absorb liquids; pay attention to the texture of the batter and make any necessary adjustments. Start with 3/4 cup carbonated beverage then add as needed to match approximate consistency shown – thick enough to stick to onions without running off. With our store brand GF all purpose flour mix, it took 1 cup + 2 tablespoons to reach desired consistency
6. Place onions in hot oil
A good way to tell if your oil is the right temperature: the onion rings will float up with the first minute or so
7. Fry until golden brown, flipping at least once. Typically, it takes around 3-4 minutes
8. Place on a paper towel and sprinkle with salt right away
9. Feast on your delicious gluten-free onion rings
