Gluten Free Crispy Chicken Sandwich Layered with Flavor and Just the Right Amount of Crunch!

We’re glad to share this recipe that we've put together from our experience over the years. Yes, this recipe is 100% gluten free but no one other than the cook will ever know... the texture of the breading is pure crunch. We pull together flavors that culminate in a delicious and unexpected balance of spice, some sweetness, salt and just a splash of a bright flavor. We layer these satisfying flavors through every bite of this sandwich.

Gluten-Free Crispy Chicken Sandwich
Ingredients List:
4 chicken thighs
1 egg
3 – 4 tablespoons gluten free 1:1 flour (we used Cup4Cup Gluten Free Multipurpose Flour)
1 tablespoon corn starch
3 tablespoons gluten free bread crumbs
Your favorite seasonings - we list our favorites in the steps below
Your favorite gluten free bread
Sliced tomatoes
Baby spinach
Jalapeños
Mayonnaise
Dijon mustard
Honey
Steps:
In a medium size bowl mix together flour, corn starch and bread crumbs
Season to taste:
Garlic powder
Red pepper flakes
Seasoned salt
Oregano
Ground black pepper
Onion powder
Chili powder
Paprika
Mix together
In a separate bowl, whisk together egg, a bit of paprika and a bit of chili powder
Prepare Chicken:
Dip chicken in egg
Toss in flour until well coated
Repeat these steps
Chicken is twice coated for a thicker outer texture and more crunch to the breading
Double breading helps lock in the meat’s moisture and avoids loss of coating while cooking
Heat oil to 360°F
Cook for 10 minutes
Place cooked chicken on paper towels to absorb oil
Add a touch of the seasonings
Building Your Crispy Chicken Sandwich:
Lightly toast your favorite bread
Slice tomatoes
Spread toast with mayonnaise and Dijon mustard; add some honey and light seasonings to taste
Place your crispy fried chicken thigh onto the toast
Place on top:
Sliced tomatoes
Baby spinach
Jalapeños
