Peach Cobbler

Nothing says summer like a fresh fruit cobbler and Peach Cobbler is a favorite at our house! Fresh peaches are topped with an easy-to-make batter, baked, then served fresh out-of-the-oven warm with a scoop or two of ice cream. There are many variations on the way cobblers are made; we created this gluten-free version especially to share with you. Enjoy!

If fresh peaches are hard to come by in your area, substituting with canned peaches will work. Just be sure to drain syrup from the peaches and you’ll be good to go!

Peach Cobbler

Ingredients:

Filling

3 - 4 fresh peaches, peeled & stones removed

¼ cup granulated sugar

¼ packed brown sugar

¼ teaspoon salt

Generous ¼ teaspoon cinnamon

4 tablespoons unsalted butter, cut into chunks

½ teaspoon vanilla; stir

¼ cup heavy cream

Batter

4 tablespoons unsalted butter, cut into chunks

2/3 cup 1:1 gluten free flour (we used Cup4Cup Gluten Free Multipurpose Flour)

2/3 cup granulated sugar

1½ teaspoons baking powder

¼ teaspoon salt

½ cup whole milk

¼ teaspoon lemon juice

Directions:

Filling

Slice or cut peaches into chunks according to your preference (we sliced each peach into quarters, then sliced each quarter into thirds)

Preheat sauce pan on medium low to medium; add:

  • Granulated sugar

  • Brown sugar

  • Salt

  • Cinnamon

Stir until sugar is melted and begins to look foamy, 6 to 8 minutes; stir occasionally

Remove peaches from heat; add:

  • Vanilla; stir

  • Slowly stir in heavy cream

Set aside

1) Ripe peaches easily separate from the stone and skin can be pulled off by hand; 2) Stir together peaches, sugars, salt and cinnamon; 3) Simmer on medium heat until foamy, 6 - 8 minutes; 4) Stir peach mixture while slowly adding cream

 Batter

Place chunks of butter in a 8” x 8” glass baking pan

Preheat oven to 350°F  

Place baking pan with butter in oven while it preheats, until butter is bubbly

In medium sized mixing bowl, stir together:

  • GF Flour

  • Sugar

  • Baking powder

  • Salt

Add; stir to combine:

  • Milk

  • Lemon juice

Remove pan with melted butter from oven

Pour batter into pan; smooth out as best you can, moving kind of quickly so the butter does not incorporate

Top with peaches, spooning in an even layer over batter

Bake at 350°F for 35 minutes

1) Place butter in pan then put it into the oven as it preheats to 350°F; 2) Once ingredients are mixed together, batter will have a bit of elasticity to it; 3) Pour batter into baking pan, over top of melted butter; 4) Spread batter rather quickly to keep it from incorporating into batter; 5) Spread peaches evenly over batter; 6) Bake at 350°F for 35 minutes; serve while still warm with a splash of cream or ice cream
