Peach Custard Crumble

What says mid-summer more deliciously than fresh peaches? Facebook friends follow the Peach Truck Tour, we sign up for updates from nearby orchards or browse fruit stands and the grocery store produce section… all in search of that fuzzy-skinned, juicy, flavor-packed peach. Peach season does wane too quickly, in my opinion.

Celiac Kitchen’s top baker put together a peach crumble with a twist. We call it the Peach Custard crumble because, you guessed it, there’s custard mixed in. Talk about peaches and cream! Add some vanilla ice cream to a still warm crumble and it gets even creamier (and more delightful :)) Feel free to improvise to create your own chorus of flavors! How about adding some blueberries? Oh my!

Peach Custard Crumble – a delicious quick and easy summertime dessert

Serves 2

Preheat oven to 375°F

Lightly butter inside of two ramekins to help prevent sticking

Prepare Peaches

Cut 3 peaches into small cubes (1 ½ per ramekin)

Place cubed peaches into buttered ramekins

Skin on or skin off? The choice is yours! We like the texture of skin on

A ripe peach will split apart and pit will remove with ease

Custard

In separate bowl mix together:

½ cup granulated sugar

1 ½ tablespoons Bob’s Red Mill One to One Gluten Free Baking Flour

Dash of nutmeg

Dash of cinnamon

Add:

¼ cup heavy cream

Splash of vanilla

Mix together

Spoon ½ of custard on top of peaches in each ramekin

Set aside to allow custard to spread into peaches

Oat Crumble Topping

Using same bowl custard was made in

¾ cup Bob’s Red Mill Old Fashioned Whole Grain Rolled Oats

¼ cup brown sugar

Using mixer or fork, cut in 2 tablespoons softened butter until butter is blended in and mixture just begins to stick together to form clumps

Prepare to Bake

If needed, use a fork to gently spread custard into ramekin making sure it reaches all of the peaches

Layer crumble over peach and custard blend

Sprinkle lightly with coarse sea salt

To save on oven cleanup later, we like to place ramekins in ovenproof baking dish that can catch any drips

Bake

Place in preheated 375°F oven; bake for 40 - 45 minutes, until fruit is bubbling and topping is a slight brown color

Serves 2

Allow to cool slightly. Serve as is or top with ice cream for added creaminess
