What’s more refreshing than a bowl of fresh berries, fluffier than freshly whipped cream, simpler than adding a little sugar here and there and combing these ingredients for a delicious taste treat? Here’s how we blend simple ingredients to create textures and taste for a light accompaniment to any meal:
Berries & Cream
Choose your favorite berries, cutting any of larger berries into bite-size pieces
Choose your favorite berries
Raspberries are rather fragile so treat them gently, especially during the stirring process
Add enough granulated sugar to cover all your berries, about 2 – 3 teaspoons
Gently blend sugar and berries
Let the berries sit for syrup to form
You’ll be glad you added sugar
Sugar helps release juices from the berries and those juices will blend nicely with the cream
Prepare garnish of fresh mint, finely chopped
Helpful hint: a towel underneath your cutting board can help keep it from sliding as you chop the mint
Freshly Whipped Cream
Heavy cream
Helpful hint: start with well-chilled cream; can also prechill bowl and beaters to speed up the process a bit
There’s a fine line between cream that’s been whipped just the right amount for a fluffy topping and cream that is overwhipped and starts forming lumps on its way to being butter. For that reason, Celiac Kitchen’s top berries and cream maker prefers whipping cream by hand, as this method helps you monitor the cream’s progress. Another option is to use an electric mixer for first 70 – 75% and hand whip to completion. If hand whipping is not an option at all, please use mixer for entire process of whipping the cream.
When do I add sugar?
Cream level has risen in the bowl and peaks and valleys begin forming in the cream
At about 70 - 75% completion, add about 4 teaspoons (to taste) granulated sugar
Continue mixing until soft peaks begin to form and hold their shape
Serve up berries
Top with cream, garnish with fresh mint and enjoy!
