Homemade Chips:
Preheat oil to 300° F
Place a strainer over a bowl
Spread some paper towels on your counter top
Cut corn tortillas into easy-to-dip chip shapes
Gently place tortillas into the 300° F oil
Fry (about 5-10 minutes but could be more or less depending on how many you're frying at once, how hot your oil is and how much the temperature drops when you put the chips in). Tortillas will turn a golden yellow to light brown color
Strain as best you can by putting chips in a large strainer over a bowl; let sit for a few seconds, then spread over paper towels
Salt to taste
Set aside
Homemade Guacamole
Gather:
1 avocado
Chile lime seasoning
Honey
Salt
Garlic powder
Onion powder
1 lime
Mash the avocado just a tad
Squeeze in one half of lime
Add chile lime seasoning to taste (I did three shakes)
Honey to taste (I used a lot)
A dash of salt (careful with this, chile lime seasoning already has salt)
Three dashes of garlic powder
Three dashes of onion powder
Smash the avocado with a fork and blend the seasonings
Taste and add more seasonings to suit your preference. You can always add seasoning but you can’t reduce, so season gently, taste, season, taste again to get it right before serving)
Serve it up and enjoy!
