Gluten Free Breakfast of Champions: Trillionaire’s Bacon and Oh-So-Fluffy Scrambled Eggs
At Celiac Kitchen, we aren't the biggest breakfast fans so when we do it, we do it big :) The star of this breakfast is the bacon. We were inspired by the brown sugar recipes found in a lot of billionaire’s-style bacon (with a ton of respect to Snoop Dogg's technique) but we added our own flare by using our favorite seasonings and placing bacon in a cold cast iron skillet to help ensure even cooking. As for our scrambled eggs, we whisked in some milk for added fluff - a great tip for the home cook :)
The title "Trillionaire’s Bacon" is a play on Snoop Dogg’s billionaire’s bacon… which is a play on millionaire’s (or million dollar) bacon… and all of it closely resembles candied bacon (obviously). Trillionaires’ Bacon
Eggs:
Crack 2 eggs into a small bowl
Add 1 tablespoon milk
Whisk together until blended
Set aside for about 15 minutes so it can come to room temperature
Bacon:
Place bacon in cold pan (we used cast iron skillet) so it renders evenly
Put burner on #3 heat
Bacon Seasonings:
Use amounts to suit your taste
A fair amount of brown sugar
Sprinkle in some turbinado sugar
Red pepper flakes
A fair amount of red pepper fakes
A fair amount of ground black pepper
Oregano
Onion powder
Garlic powder
Sage
Rosemary
Cinnamon
Mix it up
Add Seasonings to Bacon:
When steam begins to rise from skillet and bacon begins to sizzle, sprinkle seasoning mixture on bacon strips
When first side is cooked, flip the bacon
Season other side
Pull pieces of bacon as they start to look crispy
Return to Eggs:
Beat egg and milk mixture until it starts to get frothy; you’re beating some air into it
Place 1 tablespoon butter in nonstick skillet
Spread melted butter to cover bottom of skillet
Pour eggs into pan, give it a minute as the underside begins to cook
Move around in skillet
Plate muffin, eggs and bacon
Garnish with green onion for a touch of flavor and color
