Bacon Wrapped Bratwurst with Beer Cheese Sauce
Bacon Wrapped Bratwursts:
4 gluten-free brats
8 slices gluten-free Applewood smoked bacon
your favorite gluten-free hot dog bun
1. Light the charcoal (or preheat oven) to get an internal grill temp of 400-450°F for indirect grilling
2. Wrap each brat with 2 slices of bacon, making sure to tuck in the ends so it doesn't fall off while on the grill (you can also hold it in place with toothpicks if you have trouble)
3. Cook the brats for around 15 minutes, making sure to turn them frequently, until they have an internal temp of 165°F
4. Once cooled enough that they can be touched by hand, place in bun
Beer Cheese Sauce:
3 Tablespoons butter
3 Tablespoons any gluten-free flour
1 cup milk
3/4 -1 cup gluten free beer (per preference for flavor and sauce thickness; we used a dry hopped lager)
2 teaspoons Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon paprika
1/2 teaspoon Worcestershire sauce (gluten-free)
8 oz freshly shredded extra sharp cheddar cheese
1. Melt butter in a medium-sized saucepan over medium heat
2. Whisk in flour until combined and stir while cooking for 2-3 minutes, until lightly browned
3. Slowly whisk in milk until the mixture comes to a boil; stir in the beer while constantly whisking until mixture is smooth
4. Reduce heat to low; slowly stir in all flavorings and shredded cheese until cheese is entirely melted and mixture is smooth
5. Serve immediately and enjoy with brats by drizzling on top or dunking
