Macaroni and Cheese Recipe: Easy, Quick, Deliciously Satisfying

Just because our mac and cheese is quick and easy to prepare doesn’t mean it’s lost any of what we all love and crave in one of our favorite comfort foods. Our mac and cheese is melt-in-your-mouth creamy with just the right amount of cheese, all highlighted by a few extra, subtle flavors. Want delicious gluten-free mac and cheese? Mac and Cheese

Ingredients:

8 ounces gluten-free macaroni (about 2 cups)

Small amount of olive oil amount

4 tablespoon butter, evenly sliced

3 cloves garlic, minced

2 tablespoon 1:1 gluten free flour (we used King Arthur Measure for Measure Gluten Free Flour)

½ cup chicken broth

2 cups heavy cream

2 packed cups (8 oz) freshly shredded cheese, we like a mix of sharp white cheddar and Asiago

¼ teaspoon nutmeg

Salt and pepper to taste

Steps:

  1. Cook macaroni al dente according to package instructions. Reserve ¼ cup of pasta water.

  2. Pour a small amount of olive oil in a skillet on low heat, add butter and garlic

  3. Once butter is foamy add flour; stir well and cook until light brown, 2-3 minutes

  4. Slowly add broth stirring the whole time, cook 1-2 minutes

  5. Slowly add cream stirring constantly; continue to stir until mixture thickens, 7-9 minutes

    Turn heat down if it seems to be cooking too fast

  6. Add cheeses and seasonings to mixture; stir until cheese is melted and well combined (2-4 minutes)

  7. Add pasta and mix well, stir on low about 2 minutes or until desired thickness; can thin with some reserved pasta water to preference

  8. Let cool 2 minutes then serve immediately and enjoy!

Macaroni Will Finish Cooking in Sauce

Boil macaroni in water to al dente according to package instructions. It will finish cooking in sauce. Overcooking will cause macaroni to fall apart and take on a mushy texture.
