Grilled Pimento Cheese Sandwich: Gluten Free Recipe
Grilled Pimento Cheese
Serves 4
Cheese Spread Ingredients
1 cup or 4 ounces freshly shredded sharp cheddar cheese
4 ounces cream cheese, room temperature
3 tablespoons high quality or homemade mayonnaise
2-3 tablespoons pimento peppers, drained
¼ teaspoon salt
¼ teaspoon garlic powder
⅛ teaspoon onion powder
⅛ teaspoon ground black pepper
¼ teaspoon red pepper flakes
¼ - ⅛ teaspoon fresh lemon juice (optional)
Cheese Spread Directions
Put into food processor:
Shredded cheese
Cream cheese
Mayonnaise
Seasonings
Use chop setting on food processor; use light pulses until well mixed
Add:
Pimento
Splash of lemon juice (optional)
Let rest in refrigerator at least ½ hour, overnight is fine

2) We’re using sharp cheddar cheese but you can use your favorite or mix and match. Freshly shredded cheese melts better than pre-shredded cheese from the grocery store Tip: cheese is easier to shred when it’s cold;
3) Put food processor setting on chop and quickly pulse several times just until ingredients are mixed;
4) Flavors will meld as cheese spread rests before using it
Making the Sandwich
You will need:
GF bread
Pimento cheese spread
Butter
Mayonnaise
Preheat nonstick skillet on medium low setting
Generously coat outside of bread with mayonnaise
Spread cheese on bread
Wait a few minutes to allow mayonnaise to soak into bread
Add ½ tablespoon butter to heated skillet
Place sandwich in skillet, cover and cook on medium low heat 2-3 minutes
When flipping sandwich melt another ½ tablespoon of butter in skillet
Cook uncovered for 1-2 minutes

2) Generously coat outside of both sides of bread with mayonnaise for a beautiful caramelized texture and color
3) Use a good amount of cheese spread on your sandwich then run a knife along the outside edges to make sure cheese is tucked inside the bread. This prevents it from melting out too much
4) While cooking first side, cover the sandwich so cheese will melt
5) No need to cover when cooking the second side
